This bread came out absolutely delicious and I can't wait to make it again with new fruits and nuts! As summer turns to fall, I have a greater desire to bake breads that can be enjoyed after dinner with a cup of tea and some fruit. I love mixing in nuts and dried fruit to standard breads to add texture and flavor. This bread takes no time to make and it stays moist and delicious for about a week. I had some left over dried apricots and a cup of walnuts laying around so I decided to incorporate them in a quick bread. I adapted this recipe from an Apricot, Orange and Chocolate Loaf from the blog BakingBites. With a glass of milk and some banana slices, this bread really hits the spot!
Chocolate Chip Oatmeal Bread with Apricots and Walnuts
(Makes one delicious moist loaf)
Ingredients:
2 cups flour
1 cup quick rolled oats
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup walnuts
3/4 cup chocolate chips
1/2 cup dried apricots chopped
1 1/2 cups buttermilk
2 large eggs (I use fake eggs)
1/4 cup melted butter
Directions:
1. Preheat oven to 350 degrees.
2. Mix together the flour, oats, sugar, brown sugar, baking powder, baking soda, cinnamon and salt in a large bowl. Mix in the chocolate chips, walnuts and apricots.
3. In a seperate bowl, whisk together the buttermilk, eggs and butter. Mix the wet ingredients into the dry ingredients and mix well using a spatula to incorporate all the ingredients that get stuck along the sides of the bowl.
4. Pour the batter into a greased 9 x 5 baking dish and place in the oven for about 50 minutes or until a tester comes out clean. Let the loaf cool completely before cutting. YUM :)

http://www.wedding-cakes-for-you.com/chocolatecakerecipe.html This recipe for chocolate cake is the best moist chocolate cake recipe that I know. I use it for my chocolate wedding cake recipe and a triple chocolate cake recipe when I add Chocolate mousse and chocolate ganache.
Aggiungere i piselli.
Infornare e cuocere circa 40 minuti a 200 gradi, fine a doratura.
Going through my latest post there is no doubt that I'm craving for Sardinia's food this days.
The "Panadine" are very taste pastry case filled with pork meat.
Following the traditional recipe (here if you can read Italian) the filling (usually pork, lamb or even fish) and the dough cook together in the oven for almost 1 hour and 1/2.
I add a few changes on the recipe, keep reading if you want to try:
Serves 6
For the dough:
1 and 1/2 cup semolina flour
4 tbs olive oil ( the original recipe calls for lard pork)
1 tsp salt
water as needed to have a smooth and elastic dough
For the filling:
1 pound cubes on boneless pork
1/2 chopped onion
1 garlic clove
1/4 thyme
1tbs olive oil
1 medium gold potato (cut in 1/2 inch cubes)
1 cup peas
Direction:
Using a dough machine add semolina flour and salt and start to mix. Add the water until combine. Knead the dough by hand, adding as much additional flour/water as needed until the dough is smooth and no longer sticky. Leave the dough cover with a plastic foil for at least 30 minutes.
In a dutch oven sauté garlic and onion in the olive oil, 2 to 3 minutes. Add the meat and sauté for few minutes. Add the potato, salt and thyme, cook for almost 10 minutes, stirring occasionally. Add the peas, cook for ten minutes more.
Divide the dough in 6 balls. Shape each ball in two thin dough circle, one bigger than the other. Following the pictures, fill the dough with 3 tbs of filling. Crimp the dough edge to form a seal.
Some people are really creating things way beyond your imagination. This one looks more of a breakfast cereal bowl than a cupcake coz it covers most of that small cupcake.
Driving to Makati is such a hurdle to me. Many of my friends who would read this post would be surprised that I have driven to Makati in my lonesome. Why? Because I am such a scardy cat. I don't drive to a place I am not familiar with. Much less drive alone. Sure, I have been to Makati a thousand times but it's different when you are the passenger as opposed to being the driver.
When I got an invitation to attend Naturteq Directs' Rosewood Food Supplement, I quickly looked for the venue and groan- Makati! Waaaaaah! I know I have to conquer Makati. I started with Rockwell then slowly moved my way up to Makati Ave. haha
Naturteq's Rosewood Narra Bark and Wood Supplement, Dermteq and Natursentials Omega-3 Fish Oil
Naturteq Direct, Inc. is a direct selling company formed in the first quarter of 2010 by an established company, Philippine Prudential Life Insurance Company (PPLIC) Early birds to the venue were given sample packs of Dermteq- a skin care line of Naturteq Direct that uses natural ingredients to have a healthy skin. I didn't get one because I was a wee bit late... again! I have to park my car at the other end of the mall lol But I think I did great. I conquered my fear of driving to Makati hehe
Gregorio Mercado- Chairman PPLIC
Bernie Mercado- General Manager of PPLIC
A short introductory program was hosted by Trina Borgonia and Jen de Leon. Geroge Mercado, chairman of PPLIC gave a brief background of the company, Philippine Prudential Life and how it came about while General Manager, Bernie Mercado talked about the wonders of Rosewood (Pterocarpus indicus, Willd). A Traditional and Health Care Practitioner named Doctor Sonny Viloria also graced the event.
Rosewood 30 capsules in a box PhP585
Rosewood 15 Teabags in a box PhP295
Rosewood is Narra to you and me. In the olden times, pure Narra is known to have healing powers. Nowadays, PPLIC through Naturteq Direct packaged it in capsules and in tea bags form. This food supplement when taken strengthen the immune system.
The company's claim is that they are the first and only patented Rosewood Formula in the industry. No additives, no preservatives and no artificial colors or flavors were used in making this product.
These are some of the benefits of Rosewood:
fights viral infection
prevent unwanted growth
lower blood sugar level
shrink enlarged prostate
relieves difficulty in urination
strengthen resistance against infectious diseases
relieve joint pains
relieve airway congestions
open clogged blood vessels
burn unwanted fats
wash away toxins
relieve pains in menstrual disorder
relieve the pain and shrink anal mass
Now, this product looks promising especially so when I learned that it could prevent more damage on the fingers of my mother who was diagnosed with Osteo Athritis. I use the word prevent because during the intimate gathering, people from Naturteq told us specifically that this is not a cure all but merely a supplement. Medications should still be taken continuously albeit in low dosage. Of course, consulting a doctor first is still recommended. I gave the sample boxes to my dear mother and I often check on her whether she is continuously taking the supplement for her fingers. I am crossing my fingers that her pain will lessen after consuming all four boxes. But I know, as with all supplements with no therapeutic claim, it takes time.
This product is only available through direct selling. Visit the Naturteq for more info.
After a lack luster dimsum snack at King Bee Chinese Food, we met with a couple of friends to have dinner at 145° Fahrenheit Prime Steaks and Seafoods. It's a good thing though that we have eaten merienda because the order took so long to arrive at our table. Ok, if 45 minutes isn't long enough, I take it back.
bread on the house
The bread and the spread is delicious. Bubusugin ka sa bread and spread. There is a roast beef buffet for PhP1399++. You have to make an advance call because the next one served is next to eternity lol Like after your first plate, let the waiter know that you are having another one. But even that would take a long while. Plus, you can't do anything if they tell you that it's the last slice of their roast beef lol
soup
salad
The soup and salad came with the roast beef buffet along with choco mousse dessert which is yummy!
If you have ordered an entree like I did, you can have the soup and salad add on for just PhP250.
roast beef buffet
The buffet is per order basis meaning they will take your order and serve the roast beef to you. Our friends, DH included had 4-5 slices of roast beef each. The slices were at times thiner. No consistency with the slice here. Maybe you get a thinner slice when they are running out of beef to serve lol
Kidding aside, the beef is tender. And they would cook it the way you want it-medium rare, well done, etc.
choco mousse
lamb chop PhP850
You should know that the lamb is what I have ordered! I simply can't over eat so the all-you-can-eat roast beef is not for me. Not now that my jeans are getting uncomfortable to fit into.
A friend and I had repeated request for mint sauce. And each time, we were given only a small amount not even filling a teaspoon. And after the third request, the request was not granted anymore because it's already out of stock ; (
I had the best tasting lamb chops in La Reserve, Boracay. And every time, I used it as a gauge/basis to rate my lamb chops. And this one, sad to say, failed comparably with what I had. Not only La Reserve's was cheaper at PhP560, it's also juicier and tastier. Much more value for your money. So, my quest for lamb chop in Manila is still on! I bet no restaurant can beat the one I had in La reserve. It surely is worth the wait and the trip lol
orange strawberry shake PhP165
This shake tastes delicious! I can make this at home. I should get my ass off this chair and do it lol
333 mint jelly
Anyway, I was not able to finish my lambchops but I got to take it home with me. I was only able to eat the remaining lambchop after two days. I removed the crumbs on top, put it inside the microwave and ate it. Good thing I had a mint jelly supply in our refrigerator lol I had all the mint I want and never run out of it!

As I have previously posted, I was back in Serenitea Wilson branch last Wednesday to collect my free drink- I completed 10 stamps loyalty card. I added PhP4 to split my large strawberry milk tea drink into two cups. It tasted alright but I still want the original pearl milk tea.
chicken chop PhP65
A trip to Serenitea is not complete if I didn't order chicken chop. Hmm... I just discovered that the green leafy vegetables are basil. It give the chicken chop a distinct smell! Love it!
pepper fries PhP50
A bit disappointed when this was served. First, it came out late. They still have to buy the fries because they ran out of stock. Then, the fries given to us was a bit soggy and the veggies were few.
When I thought out loud that the veggies and friesthat was served earlier were soggy, immediately, the girl manning the counter went in the kitchen. A llittle later, the cook came out with the chicken chop full of basil leaves on top as seen in the second picture.
corn on a cob PhP50
I am not a fan of corn but I can surely eat this one. An order consist of three pieces of corn, cut. Present is the same pepper/ basil taste as the two above but this one it's sweet. It reminds me of how much I miss inhaw na corn found in Mines View in Baguio. I might eat corn again!
Along with my earlier complaint about the basil and fries, I asked if they also have Uji Matcha.like the one in Banawe branch as I can't find it on their display. With the conversation I had with the staff , I learned that the Uji Matcha should not have sugar in it. So, that's why my drink tasted sweet even with only 50% sugar. My, oh my!
I hope I won't encounter bad timing once more in Serenitea on my next visit! Gosh, this is my fourth post for Serenity! I guess I am really a fan ; p
Quindi: o ve li raccogliete passeggiando in qualche landa campestre d'autunno, o ce li avete in giardino.
Fatelo bollire a fuoco vivace, mescolando continuamente.
I was shying away from this restaurant for quite sometime even though DH kept on egging me to try it out. The reason was mainly because I am not a soup person. There I said it! But all that changed when our DBIL and DSIL, who are both foodies and often scout for new restaurants in Banawe area, told us that the restaurant not only serve soup but other entree as well. On top of that, sweet and sour pork is on the menu. My DSIL had me on sweet and sour pork lol When they told us about CSK, I think that was Thursday, DH and I had to try it not the very next day but on a Saturday haha If you have been reading my blog, you would have known by now that I go to work with DH on Saturdays and we usually had our lunch around that area.
The huge picture was what caught my eyes upon entering this two- floor restaurant. This restaurant can handle approximately 40- 50 seating capacity. Upon seating, I noticed that there was a group seating beside us waiting for their orders to come out and the rest of the people were either picking up their phone in order or having their orders to go.
Stairs on the left leads to the second floor dining area. At the end of the room is the toilet. The waiters were quite attentive but the kitchen was a bit slow. It took us two follow up calls before our orders came out. But it didn't come in succession. The dim sum came out on the latter part. The food pictures below show how our orders came out.
sweet and sour pork rice topping PhP115
Their sweet and sour pork tasted and looked like Ling Nam's. A generous rice serving underneath the sweet and sour pork. I'll make a mental note to request the rice to be separated on my next visit. The order came with an iced tea and a clear soup. Ain't that cheap!

Encased in a coconut, this soup consist of slices of chicken and ham. DH said it tasted salty. I think the culprit can be the ham. But that is just me saying! Although I didn't find it salty at all. In fact, I like how it tasted.
taipao PhP43
On regular days, an order of taosi spareribs dimsum is PhP65 while the tai pao is at PhP80. Good thing, these two orders were part of their PhP43 promo that day. Promotional dimsum changes each day.

I have written in my last blog about tokwa being served as tofu. And that I like my tofu custard like and smooth. I got it all in this order. I love the tofu here! Price is irrelevant for this order as long as I got my tofu lol Not in the picture is taosi spareribs at PhP43.

I have had the strangest craving for spanakopita all last week but I knew it would be a rather labor intensive process to make so I decided to hold off until the weekend. My good friend and coworker, Pam, was having a ParKty (party in the park) on Saturday afternoon and that seemed like a great opportunity to try and make a lot of spanakopita. I made two large batches of the spanakopita and it was definitely ten times easier the second time around! When working with phyllo dough, you have to work fast in order to prevent the sheets from becoming dry and brittle. Make sure to set up your kitchen space so you won't be wasting time moving things or rearranging items. The spanakopita is best when dipped in marinara sauce or tzadiki sauce. Enjoy!
Spanakopita
(Makes 72 pieces)
Ingredients:
2 lbs frozen chopped spinach, thawed and drained
1/2 white onion, chopped
5 garlic cloves, minced
3 tablespoons olive oil
1/4 cup lemon juice
1/2 cup fake eggs
12 ounces crumbled feta
1 tablespoon coridander seeds
1 tablespoon nutmeg
2 tablespoons oregano
1/2 lb unsalted butter, melted
2 lb phyllo sheets
Grated parmesan
Directions:
1. Preheat the oven to 350 degrees. Coat baking sheets with olive oil.
2. In a skillet over medium high heat saute the onion and garlic in the olive oil for about 3 minutes. Add the thawed spinach and mix gently to incorporate onion and garlic. Drizzle lemon juice over spinach mixture.
3. In a large bowl, whisk together the fake eggs and feta. When spinach mixture has cooled, add it to the bowl with feta and add in the coriander, nutmeg and oregano. Mix to until all the ingredients are combined.
4. Unroll phyllo sheets and damped a dish cloth with cold water and squeeze to drain. Working quickly and using one sheet at a time, make sure to keep the damp cloth covering the other sheets to keep them from drying. Lay one sheet on a flat surface and brush with melted butter. Place another sheet on top and brush with butter. Place a third sheet on top and using a sharp knife, cut the phyllo stack into 6 vertical strips.
5. Place one tablespoon of the spinach and feta mixture on one corner of the phyllo strip. Fold over one corner to make a triangle shape and working down the strip fold the triangle pocket over itself. Place triangles on the baking sheets and brush lightly with butter. (Sprinkle some grated parmesan on top for some extra deliciousness!)
6. Bake for 25 to 30 minutes, or until the spanakopita are golden brown on top.
Pasta made with semolina flour, salt and water. This pasta brings me back to Sardinia, to my Grandfather little city: Bitti. My cousin used to prepare the "maccarronis" from scratch, using a knitting needle as a rolling pin to shape little pieces of pasta. Originally served with a "ragu`" sauce rich of sheep's meat and grated pecorino cheese (Sardinia's aged sheep cheese) on top.
My Father, who doesn't really like crochet needle : P, had designed this pasta maker (see pictures above).
My Mom and I decided to make this pasta as my cousin was doing in the past, maybe we will try next time that my parents will come to visit us here in US.
