Ever since DH and I discovered Fu Chi Dumpling in Banawe, we have been going back and craving for more of their cuapao. I know, right, it should have been their dumplings that we are craving since it's the restaurant's name but we really like love their cuapao.
Their cuapao is always gone by the time we were there around 5 in the afternoon so you have to sometimes phone in your order to reserve and specify your pick up time. Or sometimes, we are too early and the special soft bread has not yet been delivered.
The cuapao is prepared only upon ordering. So, you are guaranteed with freshness. The cuapao is served still warm.
The picture below was my take out cuapao heated in microwave oven for a minute. The same aroma, softness of the bread and delicious fillings eventhough it has been sitting in our ref for over a day.

Miss Swan goes on holiday and desprately needs someone to look after her salon.
Last week a friend from out of town, John, came for dinner. To go along with the stuffed artichokes and the fennel and cabbage salad, I made a main course of herb crusted salmon. With a hearty roll of whole wheat bread, this was the perfect combination. I am used to having salmon every Friday night growing up and now I crave it on Friday nights. This is one tradition I would like to keep. To keep things simples, I made the salmon in a pan and covered it and let it do its thing for about 15 minutes. When you remove the cover, the salmon continues to cook a little bit longer but it remains really delicious and flaky.
Herb Crusted Salmon (Serves 3)
Ingredients: 4 filets of salmon 1 zucchini, sliced into 1/2 inch slices 1 1/2 cups cherry tomatoes, chopped 6 whole garlic cloves 2 tablespoons olive oil 1 tablespoon lemon juice
For herb crust: Fennel seeds Dried oregano Ground coriandor seeds Garlic powder Dried thyme leaves
Directions: 1. Heat the olive oil in a pan over medium high heat. Place the zucchini slices around the pan, making room in the center for the salmon fillets. Add the tomatoes around the pan and the garlic cloves. Place the salmon fillets in the center of the pan and generously lather the tops of the fillets with all the herbs so that it is completely covered. Drizzle the lemon juice over the whole lot.
2. Cover the pan and turn the heat down to medium and let the salmon and vegetables cook for about 15 minutes. Serve warm and enjoy!

A little while ago I had my cousin, Megan, and good friend, Sarah, over for dinner. I wanted to have a warm appetizer for us while we waited for the main meal of a warm goat cheese salad and chicken marbella. I picked up a whole grain baguette and some strong smelling blue cheese from East Village Cheese which is my favorite store for cheese, marinated artichoke hearts and dolmas. I am a huge fan of mushrooms and when mixed with a creamy sauce, I think they taste delicious with pasta, salad, crackers or bread. I served these warm on toasted bread. The leftovers I had the following morning on bread for a sandwich with sun dried tomatoes and spinach. The lovely thing about this mushroom mixture is the blue cheese makes for a subtle tanginess and extra creamy texture. Rather than using real cream for this I decided to use soy milk with provides for a still creamy flavor but much healthier and lighter flavor.
Mushroom Crostini
Ingredients:
12 ounces mixed mushrooms (I used bella button mushrooms and shitake), chopped
3 tablespoons olive oil 1 tablespoon thyme 2 garlic cloves, minced 1/2 cup soy milk 1/2 cup crumbled blue cheese 1 whole grain baguette, sliced
Directions: 1. Preheat the oven to 350 degrees. 2. In a skillet, heat the olive oil over medium high heat. Saute the garlic for a couple minutes and add in the mushrooms. Saute until mushrooms are soft, about 4 minutes. Add in the soy milk and sprinkle the thyme in and saute until all the soy milk is absorbed. Then add in the crumbled blue cheese and turn off the heat and saute to melt the cheese. Set mixture aside. 3. On a baking sheet toast the bread slices for about 4 minutes. Remove from oven and top each slice with a generous amount of the mushroom mixture. Place the sheet back into the oven until it is heated through, about 8 minutes. Serve warm and enjoy!

For starters, Insalata Felice is a light and healthy salad.

Whew! It was a long day in Eastwood City and yet the city never fails to lose it's splendor. It was nearing evening and the beautiful and colorful lights of the city were turned on giving life to the towering buildings that surrounded the community. We were heading back to the car when two sales agents approached us and offered to show us the show room of the available condominium rooms for sale in the Eastwood Village.
