A Return to Blogging

I really enjoy taking pictures of and writing about my garden.  I got busy last summer and then I got out of the habit. However, I'm back and I intend to do much better this year.

I also have some extra time on my hands.  I was supposed to go to France for two weeks to be with my niece, Polly, who is an English teaching assistant in an elementary school in Valenciennes. We were going to travel through France and Germany. Unfortunately, the weather in Western Europe and the Eastern US has been so bad that I had to cancel my trip. Oh, well, I will probably go over there in May and the weather will be warmer and the gardens will be in bloom.

Method
1.Dont peel the skin of apple,as it contains most of minerals,remove the seeds and make slices
2.Peel out the seeds from dates
3.Whisk Apple ,dates,milk and a scoop of icecream
4.Drain the juice and Serve chilled

Spicy Citrus Tilapia

One of my best friends, Maxine, was visiting for a long weekend and we prepared a lovely dinner of tilapia and salad for our first meal together. She is also a fan of heat so I was free to be generous with the spice! I used one habanero and, as expected, it went a loooonnng way. Tilapia cooks very quickly which makes it perfect for week night meals. I have used tilapia in the past to make fried fish tacos, and while i didn't want to fry these fillets, I wanted the spicy and citruis flavor to stick so I used a bit of flour as a sort of glue. We ate this over some basmati rice and it was a wonderful combination! The rice offset the heat and made the bites more edible. With a squirt of lime, this dish is super flavorful!

Spicy Citrus Tilapia
(Serves 3)

Ingredients:
4 fillets of tilapia
2 tablespoons flour
1 1/2 teaspoons ground ginger
A bit of ground pepper
Zest from 1 lemon
2 teaspoons lemon juice
1 habanero, finley diced
Lime slices for garnish
Olive oil

Directions:
1. On a plate, mix together the flour, ginger, and pepper. Dredge the tilapia fillets in the flour mixture.
2. Heat olive oil in a pan over medium high heat and add the diced habanero. Put in the tilapia and drizzle the lemon juice evenly over the fillets. Sprinkle the lemon zest on top. The fillets should cook for about 3 minutes per a side. Garnish with lime slices, serve with rice and enjoy!

Le mie ricette nelle cucine degli altri
Quando ho intrapreso questa mia temeraria avventura di tastiera e di fornelli non immaginavo neppure lontanamente dove mi avrebbe portata.

Avevo un'idea alquanto vaga di quel che mi attendeva... Non sapevo quanto tempo avrei potuto dedicarvi e se sarei stata in grado di continuare. Quanta gente avrei incontrato. Quante ricette del mio archivio sarei riuscita a smaltire e quante ne avrei raccolte per strada. Quanto avrei scritto, quanto avrei cucinato. E se mi sarebbe piaciuto.

Non amo fare bilanci, perché non mi piace tirare una riga e ridurre tutto a contabilità: dare e avere. Ma certo un po' di cose le ho scoperte: e sono delle autentiche sorprese.

Tra queste, la più inaspettata è stata scoprire che le ricette di casa mia funzionano anche nelle cucine degli altri: nel senso che molti di voi le provano e poi mi scrivono per farmelo sapere. A volte, ci fanno addirittura un post.

Beh, permettetemi di dire che è questa la mia più grande soddisfazione di blogger. E non perché io abbia qualcosa da insegnare (in cucina tutti insegnano e tutti imparano...). Ma perché quando scrivo i miei post, verificando maniacalmente dosi e passaggi, penso sempre che l'idea che vorrei trasferire è in fondo una soltanto: cucinare regolarmente senza complicarsi la vita è possibile, ed è alla portata di tutti.

Perciò ho pensato che fosse giusto dedicare uno spazio - in questo mio blog - alle ricette preparate da voi: perché avete avuto il coraggio e la voglia di provarle, fotografarle, raccontarle. Perché sono ricette mie che si son fatte crescere le gambe, hanno preso il largo e sono diventate vostre. Perché è bello vedere come ciascuno le presenta, leggere come ne parla. E perché ormai rischiavo di perdere il conto di quelle che si sono fatte grandi e se ne sono andate di casa...

Perciò questo non è un vero post, ma solo il mio modo di dirvi grazie.
E spero non vi imbarazzi sapere che mi avete resa felice...

I limoni della foto...
...sono un regalo, graditissimo e profumato, ricevuto qualche giorno fa. Erano così belli che non ho vuto il coraggio di utilizzarli subito, e me li sono goduti per un po' in versione decorativa. Ma mi sembrava un autentico spreco lasciarli lì per bellezza, e così ho deciso di impiegarli in varie preparazioni senza buttar via nulla ad eccezione dei semi. Buccia, polpa, succo: un aroma e un profumo incredibili. Che mi hanno ricordato - se mai ce ne fosse bisogno - che la buona cucina inizia dalla ricerca di materie prime di qualità. Trovate quelle, il resto viene da sé...

Breakfast Pizza

Definitely one of the most fun things to do is make variations of pizza. Just a couple days ago, my friend and I wanted to make some pizzas and I didn't have any dough and Trader Joe's just felt too far away so we went to our local pizza shop to ask if we could buy some of their fresh dough. The first place we went, Muzzarella, said no but I was determined so I made us walk a little further until we came to the pizza shop, Apizza, a newbie to the hood. The guy was happy to give us a huge beautiful round of their fresh dough and a twenty minute conversation about his pizza place in Stanton Island and his Sicilian pies and a coupon for 4 free slices! After making pizzas with this dough from Apizza, I definitely notice the difference in good dough. I love using Trader Joe's whole wheat pizza dough but this dough, pictured below, tasted ten times better. I'm sure it was probably more salt or butter but the dough was chewy ad just straight but tasty. Here is a picture of the dough as it was give to us:
I should mention that it was a Sunday morning and while I do like pizza at any time of the day, I wanted something a little more breakfast-like. Basically my thought process was breakfast = eggs, pizza + eggs = breakfast pizza. My algebra has become really quite simple since high school. This pizza definitely will be repeated and is one of my favorites! It tasted fresh and simple and the egg added a delicious additional flavor and texture. I used two eggs for the top only because it was just my friend and I otherwise use as many eggs as you have people. Also, usually I will grate the cheese for the pizza, but this time I peeled it into long strips, or shavings and I prefer much better for this type of pizza. I will definitely be making this pizza again and changing nothing! Hmmm......okay, maybe I would add a little more za'tar. With a glass of orange juice, this is the best Sunday breakfast pizza!
                          

Breakfast Pizza
(Makes one pie the size of a baking sheet)

Ingredients:
Dough
1/2 cup tomato garlic marinara
1 cup whole canned tomatoes
Parmesan shavings
Mozzarella shavings
2 large eggs
2 teaspoons za'tar
1 handful fresh parsley, chopped
Directions:
1. Preheat the oven to 400 degrees and place baking sheet in the oven to heat up. Roll out dough to the size of the sheet.
2. Sprinkle flour on the sheet and carefully place the rolled out dough on the sheet. Drizzle it with olive oil and using a fork, poke holes all over the dough. Bake for approximately 5 minutes.
3. Spread the marinara sauce all over the dough, using more if necessary. Next place the whole tomatoes evenly over the dough. Follow with the parmesan and mozzarella shavings until most the pizza is covered. Finally, sprinkle the za'tar evenly across the cheese, using more if you want.
4. Bake the pizza for 8-9 minutes.
5. Just before pizza is ready, so at about 6 minutes, fry the eggs. Remove pizza from the oven when the cheese is melted and place the fried eggs on each half of the pizza. Sprinkle the parsley evenly over the pizza. Serve and enjoy!

Sicilia! Beautiful People and Places!

I fell in love with Sicily. It is a truly special place that I hope to return to again and again. To me, Sicily felt almost like a country of its own. The landscape, climate, and cuisine was very different from the rest of Italy, but now I am understanding that every region within Italy stands on its own with a completely separate history and cultural attributes that make traveling through  Italy so exciting. Julietta's family lives in a small town in southern Sicily called Siculiana. It is a situated on a hill with fertile pastures for cattle grazing every morning! We stayed with Julietta's Zia Asunta (Aunt Asunta) who's balcony provided sweeping views of the town on the hill and the cattle during their morning grazing. Here is a picture of Asunta's back  balcony:
It is difficult to convey the sense of peace and tranquility of Siculiana and Sicily through pictures. Something about the fresh air, the ease of the people, the social aspects revolving around meals, and the changing colors of the sky and landscape throughout the day...it was all so peaceful and so different than anything I was used to in my day to day life.
Evert Wednesday there is a traveling market that arrives in Siculiana and all the people meet at the market to purchase goods ranging from nail polish and clothing to local cheeses and fresh fruit. Here is a picture of Julietta with her Aunt Asunta infront of the formaggi truck:
We always had fresh bread with lunch and dinner that was very soft. It all came from the same local baker pictured below:

There is a castle that is perched on top of Siculiana and here Julietta and I are at the top with gorgeous vistas. You cannot see it from the picture but someone had spray painted "Hollywood" in white on the hill in the background.

Le vacanze???

Non ci posso credere, vai a letto alla vigilia di Natale e ti risvegli a gennaio inoltrato chiedendoti dove sono finite le tue vacanze. Le mie quest'anno sono proprio volate! E` stato il nostro primo Natale lontano dai genitori e lontanto dalla nostra adorata Sardegna. Ma non eravamo soli, no, no...Sono venuti a trovarci mio fratello e la moglie e una coppia di amici, con la loro splendida bambina di 6 mesi. Abbiamo cucinato e mangiato all'italiana, siamo anche riusciti a trovare lo zampone per l'ultimo dell'anno. E ora... beh ora si va in palestra per cercare di perdere tutti i kg, che chissa` come, ci sono rimasti sulle spalle.

Vi lascio con una ricettina tutta sarda, sono i biscotti che ho preparato per le nostre colazioni natalizie

Ingredienti:
1 kg di farina
6 uova
350 g di zucchero
300 g di strutto o nel mio caso burro
la scorza grattuggiata di due arancie
2 bustine di lievito chimico
un barattolo di confettura
zucchero a velo

Assicurarsi che tutti gli ingredienti siano a temperatura ambiente.
Polverizzare lo zucchero con l'aiuto di un mixer o usando il bimby 10 secondi a velocita` turbo.
Lavorare il burro con lo zucchero. Incorporare un uovo alla volta. Aggiungere gli aromi e per ultima la farina settacciata con il lievito. L'impasto e` simile ad un frolla. Stendere la sfoglia alta al massino mezzo cm, cuocere i biscotti per circa 15-20 minuti a 170 gradi.
Riscaldare la confettura in un pentolino, calda si spalmera` facilmente sulla base del biscotto, coprire con un secondo biscotto e spolverare di zucchero a velo.

I can't believe that I went to sleep on Christmas Eve, I wake up and it's already mid January. I wonder: where did my vacation go? Yes, my vacation run away too fast, as usual! It was our first Christmas spent away from our parents and from our loveable island: Sardinia. But my brother and my sister in law were here too; also, a couple of friends with their adorable baby came to stay with us for few days. We cooked and ate in Italian style, we even found the "cotechino" for the New Year's Eve dinner. Now we need to spend more time in the gym to loose the few pounds gained during these past holidays.


This holiday I made this Sardinia's cookies:


Ingredients
8 cup all purpose flour
6 eggs
1 1/2 cup of granulated sugar
2 1/2 stick of butter
2 teaspoon of orange zest
1 oz baking powder
1 pinch of salt
1 cup strawberry preserve
confectioner's sugar for sprinkling


Sift the flour, baking soda and salt together.
Beat softened butter and sugar until light and fluffy. Then add the egg and the orange peel. Continue beating to combine.
Fold in the flour, mix until combine (do not over mix). Shape into flattened disks. Wrap in plastic and refrigerate the dough for an half an hour. Preheat the oven to 375 degree. Roll out the dough in a lightly floured surface (silicon mat) to 1/4 inch thick; cut out the cookies. Bake the cookie on a parchment-lined baking sheet until golden. In a saucepan heat the preserve and assemble the sandwich cookies. Sprinkle the cookies with confectioner's sugar.

Sun Dried Tomato Hummus

This hummus has hand down been my most successful one! It was the perfect consistency and wonderfully even in ingredients. Fortunatley I made a lot of it and the entire tub was finished by four people over one dinner! This is a no fail recipe.

Ingredients:
1 1/2 cans of chickpeas, rinsed and drained
1/4 cup of the juice from the chickpea can
12 sundried tomatoes
6 garlic cloves
1/3 cup tahini
a little less than 1/4 cup olive oil
1 tablespoon lemon juice

Directions:
1. Mince the garlic cloves and sundried tomatos in a food processor. Add all the other ingredients and blend until you have your desired consistancy. YUM!

Vellutata di zucca a pois di porri
La zucca è una delle mie passioni. Un tempo non era così diffusa, dunque non ho ricette di famiglia - di quelle scritte con bella grafia su foglietti ingialliti - a disposizione. La mia è una scoperta relativamente recente: una cena a Parigi con soufflé di zucca e foie gras.

Da un coup de foudre in età adulta è difficile riaversi. E difatti io non mi sono riavuta: nel senso che il nostro folle amore continua, e ad ogni autunno si riaccende di passione.

Non è solo questione di colore (che pure, da solo, varrebbe tanto amore) o di sapore, ma di consistenza. Perchè la zucca buona è quella con una polpa a grana fine, farinosa e compatta: si deve sciogliere in bocca. Se la materia prima è quella giusta, la zucca non mi delude mai: la lesso, la arrostisco, la stufo, la cuocio al vapore. La strapazzo in cento modi e lei mi segue, tira fuori tutta la sua personalità: che è dolce, ma non zuccherosa, delicata ma con un pizzico di audacia, morbidamente grintosa: sensuale.

Per questo io - che estraggo sempre a casaccio i miei foglietti dall'archivio - dinanzi a lei mi arrendo: e decido di celebrarla per un'intera settimana.

Solo ricette alla zucca. Non è uno scherzetto di Halloween a scoppio ritardato: niente orride lanterne americane, con i tratti incisi a colpi di coltello. Ma morbide zucche mantovane, che voluttuose profumano in cucina e sinuosamente avanzano sulla mia tavola.


INGREDIENTI (per 2-3 persone)

per la crema:

zucca: mezza
porri:
1 di media grandezza (solo la parte bianca)
latte: 1 bicchiere
granulare vegetale: 1 cucchiaino
noce moscata:
1 pizzico
sale

per le polpettine:

ricotta:
100 gr
uova: 1
ricotta salata grattugiata: 4 cucchiai
porri
: la parte verde di quello usato per la crema
pane grattugiato finemente: 3 cucchiai
farina: 1 cucchiaio e mezzo
olio extra-vergine di oliva

Mondate la zucca (e se è quella buona, con la buccia dura, armatevi di pazienza...), lavatela e fatela a pezzi non troppo grossi. Mondate il porro, sciacquatelo bene e fate a pezzi la parte bianca (circa 2/3 del totale), tenendo il resto da parte.

Mettete la zucca e il porro a pezzi in una pentola, copriteli a filo d'acqua, aggiungetevi il granulare e cuocete con il coperchio finché le verdure non sono tenere (circa 15-20 minuti). Non cuocetele troppo, altrimenti diventano di un verdognolo triste.

A cottura ultimata aggiungete il bicchiere di latte e lavorate a crema con il minipimer, aggiungendo se necessario un po' d'acqua, poi aggiustate di sale e di noce moscata.

Mentre la crema cuoce preparate le polpettine. Tagliate a fettine finissime la parte verde del porro e fatela andare in una padella antiaderente con un cucchiaio d'olio finché non la sentite tenera. Fate raffreddare e tritate non troppo finemente con la mezzaluna.

Lavorate in una ciotola la ricotta con l'uovo, aggiungete la ricotta grattugiata, i porri tritati, il pane grattugiato e infine la farina. Aggiustate eventualmente di sale (ma non dovrebbe essercene bisogno se la ricotta salata è... salata). Ricavate dall'impasto delle polpettine di un paio di centimetri di diametro e mettetele a riposare su un piatto.

Lessatele in un pentolino d'acqua con un pizzico di sale per non più di due-tre minuti, scolatele delicatamente con una schiumarola e servitele con la vellutata.

Di come si può essere facili, ma non cedevoli
La zucca è una materia prima facile da trattare, e questo me la rende ancor più simpatica. L'unica difficoltà è trovare quella giusta. Mi è capitato più volte di acquistarne e cucinarla, dovendo poi buttare tutto. Alcune hanno una consistenza granulosa, sono più ricche d'acqua e vanno bene tutt'al più per una zuppa: se le mettete in forno, si trasformano in una brodaglietta quasi inservibile, e di sapore sono così così... Non avendo un verduraio di fiducia (uno al quale depositare graziosamente sul bancone la zucca sbagliata che mi ha venduto il giorno prima), ho imparato che l'unico sistema è chiedere di aprirla: se la buccia è cedevole, non è la zucca giusta. Se invece è dura e richiede l'uso di una certa forza, procedete senza esitazione: ben sapendo che a casa dovrete metterci un po' di pazienza anche voi.
Per il resto, potete tranquillamente prepararla con un giorno d'anticipo: quale che sia l'uso che dobbiate farne, non perderà di fragranza, ma anzi acquisterà di sapore. La zucca è una di quelle ragazze che l'attesa non porta a inacidirsi...

Tête-à-tête per una zuppa a pois
Cucinare a due è un banco di prova fondamentale. Stare in coppia in cucina richiede un livello di comunicazione che va ben al di là della parola. Non basta condividere i valori di fondo: bisogna entrare nello stesso flusso creativo, intuire e anticipare i movimenti dell'altro e apprezzare in due il risultato finale.
Se siete in procinto di prendere decisioni destinate a cambiarvi l'esistenza, fate prima un invito per una cena a due con preventivo passaggio in cucina: questa è la ricetta giusta.
Fategli sbucciare la zucca: dovrà metterci forza e delicatezza insieme. Poi dedicatevi in due alle polpettine, con calma, chiacchierando... Se le sue sono grandi come bocce, oppure delle frittelle informi, rassegnatevi: vi ci vorrà del tempo per fargli capire quel che volete. Come dire: vi segue, ma non siete proprio sulla stessa lunghezza d'onda, per cui affrettatevi a trovare altri terreni d'incontro.
Se invece, dopo aver osservato con attenzione le vostre polpette, ne sforna di uguali, magari con una tecnica diversa, rompete gli indugi: godetevi il vostro tête-à-tête, perché la vellutata è il piatto giusto e il dopocena promette bene. Appurate solo, tra una chiacchiera e l'altra, che non sia fresco di corso di cucina serale per single impenitenti....
