This bread came out absolutely delicious and I can't wait to make it again with new fruits and nuts! As summer turns to fall, I have a greater desire to bake breads that can be enjoyed after dinner with a cup of tea and some fruit. I love mixing in nuts and dried fruit to standard breads to add texture and flavor. This bread takes no time to make and it stays moist and delicious for about a week. I had some left over dried apricots and a cup of walnuts laying around so I decided to incorporate them in a quick bread. I adapted this recipe from an Apricot, Orange and Chocolate Loaf from the blog BakingBites. With a glass of milk and some banana slices, this bread really hits the spot!
Chocolate Chip Oatmeal Bread with Apricots and Walnuts
(Makes one delicious moist loaf)
Ingredients:
2 cups flour
1 cup quick rolled oats
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup walnuts
3/4 cup chocolate chips
1/2 cup dried apricots chopped
1 1/2 cups buttermilk
2 large eggs (I use fake eggs)
1/4 cup melted butter
Directions:
1. Preheat oven to 350 degrees.
2. Mix together the flour, oats, sugar, brown sugar, baking powder, baking soda, cinnamon and salt in a large bowl. Mix in the chocolate chips, walnuts and apricots.
3. In a seperate bowl, whisk together the buttermilk, eggs and butter. Mix the wet ingredients into the dry ingredients and mix well using a spatula to incorporate all the ingredients that get stuck along the sides of the bowl.
4. Pour the batter into a greased 9 x 5 baking dish and place in the oven for about 50 minutes or until a tester comes out clean. Let the loaf cool completely before cutting. YUM :)

After a lack luster dimsum snack at King Bee Chinese Food, we met with a couple of friends to have dinner at 145° Fahrenheit Prime Steaks and Seafoods. You have to make an advance call because the next one served is next to eternity lol Like after your first plate, let the waiter know that you are having another one. The buffet is per order basis meaning they will take your order and serve the roast beef to you. Our friends, DH included had 4-5 slices of roast beef each. The slices were at times thiner. No consistency with the slice here. Maybe you get a thinner slice when they are running out of beef to serve lol
Kidding aside, the beef is tender. And they would cook it the way you want it-medium rare, well done, etc.

A friend and I had repeated request for mint sauce. And each time, we were given only a small amount not even filling a teaspoon. And after the third request, the request was not granted anymore because it's already out of stock ; (
I had the best tasting lamb chops in La Reserve, Boracay. And every time, I used it as a gauge/basis to rate my lamb chops. And this one, sad to say, failed comparably with what I had. Not only La Reserve's was cheaper at PhP560, it's also juicier and tastier. Much more value for your money. So, my quest for lamb chop in Manila is still on! I bet no restaurant can beat the one I had in La reserve. It surely is worth the wait and the trip lol

Anyway, I was not able to finish my lambchops but I got to take it home with me. I was only able to eat the remaining lambchop after two days. I removed the crumbs on top, put it inside the microwave and ate it. Good thing I had a mint jelly supply in our refrigerator lol I had all the mint I want and never run out of it!
Another interesting latte art! This is so different with all the latte designs I've seen so far. This one is really simple yet it captures my attention with the solar system idea. This might not be as hard to do as the other designs but definitely cute!
For my good friend Sarah loves everything raspberry and strawberry so I decided to make some strawberry filled thumbprint cookies for her birthday. These cookies are delicious and I remember the first time I made them as a kid with my mom; we used the Williams Sonoma Cookbook for Kids and they were super fun and easy to make. I found this recipe on the Joy of Baking website, a new site that I will definitely be frequenting more often now that I have an electric mixer. I was looking for a raspberry jam but unfortunately Trader Joe's was out, not surprising, so instead I found a fantastic strawberry jam with real chunks of strawberry. The wonderful thing about these cookies is how flexible they are, you can use a variety of nuts in the batter and any jam for the filling! It's hard to go wrong with these addictive buttery bites.
Thumbprint Cookies with Strawberry Jam
(Makes 40 cookies)
Ingredients:
1 cup unsalted butter, room temperature
1/2 cup white sugar
2 large egg yolks
1 teaspoon pure vanilla extract
2 cups all purpose flour
1/4 teaspoon salt
1 1/2 cups walnuts, finely chopped
1 cup strawberry jam
Directions:
1. Preheat the oven to 350 degrees and place the rack in the center of the oven. Line a baking sheet with parchment paper.
2. In a bowl, cream the butter and sugar with an electric mixer until light and fluffy, about 2-4 minutes.
3. Add the egg yolks and vanilla extract and beat. Add the flour and salt and beat just until incorporated. Mix in the chopped walnuts with your hands or a spatula.
4. Roll the dough into ball about 1 inch wide and place on the baking sheet. With your thumb, lightly press down in the center of the ball to make an indentation. Fill the thumbprints with 1/4 - 1/2 teaspoon of jam.
15. Bake for 13-15 minutes, or until the cookies are slightly golden and the jam filling has set. Let cool on a wire rack. ENJOY!
My front porch faces east and I have a large oak tree in my front yard. Consequently, my front porch is shady. The area next to my front door gets no direct sun and it's fairly shady. I struggle to find colorful plants that will grow in this space. I have finally found a great combination: caladium, southern comfort coral bells, and thunderbolt hosta.

I have previously posted aboutGynura Procumbens. A plant that has numerous benefits for our body. We stumbled upon this plant in our search for Ashitaba plant. Some mistakenly named Gynura Procumbens as the Ashitaba Plant. Their leaves might be the same but a closer look would prove it otherwise. The ridges of the leaves are more pronounced in Ashitaba plant than in Gynura Procumbens. Now , before I delve deeper, let me tell you more about the tomorrow leaf- Ashitaba.

What is Ashitaba?
Ashitaba (Angelica Keiskei Koidzumi), also called DON QUI, a native in the Japanese island of Hachijo (Longevity Island). Ashitaba is also known as Tomorrow leaf and sometimes longevity herb because of its ability to reproduce a leaf on a daily basis. Angelica is latin for Angel. It connotes godly or heavenly effects.

Searching for Ashitaba plant here in the Philippines might lead you no where or in our case to Gynura Procumbens. A family friend living in Singapore recently brought back with her a few stem of Ashitaba for transplanting. But it never propagate. Is it because of the soil, the weather or the watering of the plant? I don't know.
Luckily, an SIL of mine went back to Singapore a few weeks ago and brought back with her a lot of Ashitaba to transplant. All the plants are now in the care of my other SIL whose helper apparently have green thumbs. So, let's see what's going to happen with the plant.

Hachijōjima (八丈島, Hachijō-jima, Hachijō Island) is one of the Izu seven islands, situated 290km's South of Tokyo is a semi tropical paradise. From swimming in mountain waterfalls to diving in crystal clear waters, Hachijo is just waiting to be explored.
During the Edo period, the island was a place of exile for convicts and it was designated a penal colony in 1608. Sites of interest like the round stone walls Tamaishigaki are prevalent on Hachijojima and were built by convicts and islanders using large stones rounded by waves and washed ashore on the beach.

Hachijōjima is popular with surfers, with three reef breaks and consistently warmer water than mainland Japan because of a warm water current called the "Kuroshio". Due to the fact Hachijōjima is a volcanic island there are a few black sandy beaches. The main one is next to the main harbour of Sokodo. There are various skin diving/snorkeling points to explore.
Hachijōjima's scuba diving points are many and varied. Nazumado is the best known of them, and is considered to be one of the top ten dive points in Japan. Sea turtles are common and underwater lava bridges are typical features for a volcanic island. Hachijōjima is also known for its natural onsen, hiking, waterfalls, and natural beauty.
Between the months of May to September seven varieties of bioluminescent mushrooms can be seen. Rainy season is the best time for viewing them. Free tours are organized nightly by the local mushroom association. Bookings required.
Other activities for visitors include visiting the botanical gardens, exploring wartime tunnels, day trips to nearby Kojima island and hiking to the top of Hachijo-fuji, the island's extinct volcano. Kihachijo silk cloth is woven on the island, and one of the workshops in Nakanogo is open to tourists.
